Here the experience unfolds across two extended tasting menus – with the option of reducing either to four freely chosen courses – one vegetarian and one vegan, with almost all the vegetables sourced from the property’s own kitchen gardens or from cultivation elsewhere on the island. Among the most representative dishes, the signature “Ris8” stands out, interpreting technique and creativity in a contemporary key.
