‘Kishin’ refers to the ‘joyful mind’ that Zen Buddhism encourages cooks to adopt. The term encapsulates a natural feeling of gratitude to those who eat and an attitude of joy with respect to meals. The menu consists of rice dishes cooked in earthenware bowls and soups; accompaniments include round herring and pickled vegetables. Rice is served a little at a time, starting just before it is fully cooked, so guests can experience the change in flavour as steaming progresses. Taste a true Japanese breakfast of ‘one bowl of rice and one bowl of soup’.
