De beoordeling van de Michelin Gids
The name Shōyu – a type of Japanese soy sauce – is a clue as to what they serve at this tiny little shop, which specialises in classic ramen dishes. Their rich, full-flavoured broths complement the homemade noodles perfectly, and there’s a great range of different ingredients to explore, from ajitama marinated egg to Wagyu beef – should you wish, you can even choose to go ‘soupless’. There are various rice bowls available too, and be sure to open by sharing some of the tasty starters like gyoza or tataki. Service is sweet, prices are excellent and there’s an appealing buzz to the modern room.
