Shinji Imoto apprenticed in Italian cuisine, but his desire to study sauces led him to French cooking. Fascinated by its depth and subtlety, Chef Imoto soon switched fully to French cuisine. He prizes combinations of familiar fare, such as apples paired with boudin noir sausages, navy beans with bacon, and oysters with spinach. The restaurant’s name means ‘The Gift’, and each dish brings to guests the chef’s devotion to his craft.
