This intimate kappo is in the bustling heart of Kyoto’s Shinkyogoku district. The owner-chef is the second generation, having inherited the business from his father. The menu lists ingredients only: choose the ingredients and he will choose an appropriate culinary approach according to taste. For example, select hamo and the chef may prepare it poached or Yanagawa style; greens may be dressed with sesame sauce or made into ohitashi. Signature dishes are shimesaba sushi and salt-grilled guji.
