The second-generation owner-chef, having learned his skills from his predecessor, holds court behind the counter with his son. For first-timers, we recommend the Edomae Nigiri: 10 nigiri with elaborate toppings such as zuke-maguro, gizzard shad seasoned with vinegar and salt, and anago coated in nitsume.
